Chicken Tikka Biryani is a famous Pakistani recipe. The dish is made with chicken which is marinated in spicy mix of Yogurt and Spices, then cooked in the oven for making a delicious homemade Tikka then it is finally mixed with Gravy and Long Grained Basmati Rice.

Biriyani is considered as the best and most eaten dish of Karachi and Hyderabad and this Royal cuisine was introduced by the Nizams of Hyderabad during the Mughal reign, and then after various delectable and tasty Vegetarian and Non-Veg Biryani versions of this delightful cuisine came out in the sub-continent. It can be served with raita also.

In vegetarian dishes we have Vegetable Biryani, Paneer Biryani, Microwave Veg Biryani, etc. In Non-Vegetarian Section, there is Chicken Biryani, Egg Biryani, Chicken Dum Biryani, Mutton Biryani, Hyderabadi Chicken Biryani, etc, there is some difference in cooking all these biryanis at home, and this chicken Tikka Biryani recipe is another delicious type of biryani to be made at home.

Ingredients

For marinating the Tikka

  • 5-6 Chicken thighs with legs
  • 250 grams Yogurt
  • 2 tbsp Lemon juice
  • Salt to taste
  • 3 tbsp Tikka masala
  • 1 tbsp Ghee
  • 1 tbsp Ginger-garlic paste
  • 1 tbsp Cumin powder
  • 1 tbsp Chili powder
  • ¼ tsp Yellow food color

For giving smoke

  • 1 piece Coal small
  • 1 tsp Oil

Biryani masala

  • 2 Onion large, sliced
  • 15-20 cloves Garlic
  • 2 inch Ginger
  • 2 pieces Cardamom
  • 3-4 pieces Cinnamon
  • 8-10 pieces Cloves
  • 10-12 pieces Black Pepper
  • 2-3 pieces Green Cardamom
  • 3 pieces Bayleaf (تیز پتہ)
  • 1 piece Nutmeg small (جائفل)
  • 1 piece Mace (جاوتری)
  • 2 piece Star anise (بادیان کا پھول)
  • 1 tbsp Dry Coriander Powder
  • 1 tbsp White Cumin Powder
  • 1 tbsp Red Chili Powder
  • ½ tbsp Turmeric Powder
  • 8-10 Green Chilli chopped
  • 250 grams Yogurt
  • 3-4 Tomatoes chopped
  • 2 tbsp Green Coriander Leaves optional
  • 1 cup Ghee or Oil
  • Salt to taste
  • 6 pieces Plums

Boiling Rice

  • 5 cups Basmati Rice washed, soaked for 25 minutes
  • 5 cups Water
  • Salt to taste
  • 1 tbsp White cumin
  • 2 pieces Star anise
  • 2 pieces Bayleaf
  • 2 Green Chili chopped
  • ½ cup Ghee or Oil
  • 3 Lemon sliced
  • ¼ cup Mint leaves fresh
  • 1 pinch Yellow food color

Instructions

For Marinating the Tikka

  • Wash the chicken pieces. When dry then cut it. Add the ingredients in yogurt and mix it well. Then coat the chicken pieces in the batter and then put in the refrigerator, covered.
  • Put the chicken pieces in a flat-bottom pan and then cover the lid for cooking.

For Smoking the Tikka

  • When the water is dry and the chicken pieces are cooked then put the piece of coal and then pour oil and quickly cover the lid.

Biryani Masala

  • Fry the onion in the oil until reddish brown then add garlic and fry for a short time and then put into a bowl and let it cold.
  • Add yogurt, tomatoes, salt, chili, turmeric powder, garlic, ginger and fried onion in a blender and blend well. When blended add fried onions in it.
  • Put the batter in the same oil in which the onion was fried. Add the rest of the spices and then cook. When the masala will start leaving the ghee then add green chilies and coriander and finally cover the lid.

Boiling Rice

  • Take a skillet add water and all the rest of the ingredients. When the water is hot and the steam starts rising then add rice in it. When it is 90% cooked and the water is dry.

Layering

  • Spread a layer of biryani masalah at the bottom of the skillet. Then a layer of rice. Then a layer of masalah again and then a layer of rice. Put chicken pieces, some slices of Lemon, yellow food color, fried onion and mint leaves. Cover the lid for 10-15 minutes.
  • After 15 minutes uncover the lid and mix the ingredients.
  • Your alluring Tikka Biryani is ready. Serve hot.

Notes

  • You can serve it with raita.
  • This is best for a feast.

Marinating the Tikka
