Ras malai, also known as Rossomalai , is a dessert of the sub-continent especially. It has been described in the west as “a rich cheesecake without a crust”. It is considered to be a variation of the rasgulla in which syrup is replaced with thick milk in it.

According to wikipedia the origin of this dish is believed to be of Bengal and is invented by Krishna Chandra although This news is just a claim by the K.C Das Grandsons and is said to be ‘impossible to verify’.

It is my favorite dessert. As a kid I wasn’t very fond of sweets but Ras malai was the only one I liked. It is a royal sweet often served in weddings and eaten on special occasions especially of Eid or other functions.

This recipe is a sweet, traditional dessert that is very popular in Pakistan. It is made with dry milk, eggs, baking powder, green cardamom, pistachio some almonds, milk, and sugar. Ras malai balls are prepared and dipped in creamy milk flavored with cardamom powder which gives it a very delicious taste. This delicious dessert recipe tastes best when served chilled. It’s served with thickened milk along. Garnishing of almonds and pistachios, makes it look divine and tasty.

‘Ras’ means juice, and ‘Malai’ means cream in Urdu. The word malai is derived from the Persian word balai which means cream of milk. It is an Eid special dessert made with sugary white cream. It is cooked in sugar syrup and milk with tasty saffron and pistachios. It is popular in many foreign countries; you can serve them after dinner. Serve this sweet dish chilled for better taste.

Ingredients

For Milk

  • 8-10 Green Cardamom
  • 1 kg Milk
  • 200 gram Khoya
  • 250 gram Sugar

For Ras Malai balls

  • 200 gram Dry Full cream Milk
  • 2 tbsp Flour
  • 1 Egg
  • 1 tsp Baking Powder
  • 1 tbsp Oil

For garnishing

  • Chopped Almonds, Pistachio, Silver Paper

Instructions

For Milk

  • Take a sauce pan and add milk, green cardamom and sugar and leave it for cooking. When boiled then add khoya/condensed milk and leave it on low flame.

For Ras Malai balls

  • Meanwhile the milk is being cooked you can prepare your ras malai balls .Mix all of the ingredients mentioned above (but don't knead) and then make small balls and press it gently a little.
  • Put your balls in the milk. Cook on low flame. When the balls will be cooked they will slowly come to the surface from the bottom.
  • Put the balls in a dish with the milk carefully. Garnish it with pistachio, silver paper and almonds.
  • Your flavorful Ras Malai is ready. Serve cold.

Notes

  • You can make any shape of the pieces making balls are not necessary. 
  • You can add condensed milk instead of khoya.
