Beef yakhni pulao is wonderful and amazingly tasty pulao recipe in which rice cooked in beef stock. On Eid-ul-Adha Pakistani people love to make it with fresh meat because of the fresh meat of the animals sacrifice and it tastes really good when cooked with fresh meat. Actually I myself like Mutton yakhni pulao over the beef one but the beef one is also a big hit . As the tender beef pieces gives realistic classic flavor to the dish as compared to chicken yakhni pulao.

Yakhni is supposedly the stock of the meat with few aromatic spices added in it. The meat i.e. the Chicken or the beef or the Lamb, is boiled with the ingredients in a bouquet garnii. The potli i.e. the bouquet garni in which we wrap with the aromatic spices are put into a pressure cooker along with the meat. Boil everything together until meat cooks to the right texture.

Most noteworthy, remember to cook the meat pieces just right and do not over cook it. The soupy texture what we get after the meat cooks is called as Yakhni. And you can add this yakhni in a pulao. Rice is then cooked along with some spices and yakhni stock, hence the Yakhni Pulao.

Although there are many other types of pulao’s and biryanis, but the flavor and amazing taste what we get in beef yakhni pulao recipe is incomparable.

Ingredients

For making Beef stock

  • 750 gram Beef
  • 5 cups Water
  • 1 Onion peeled
  • 1 bulb Garlic
  • 1 piece Dried Ginger 1½ inch
  • 2 tbsp Salt
  • 1 pinch Turmeric
  • 1 tbsp Dried Coriander
  • 1 tbsp Fennel Seed
  • 1 tbsp Whole spices

For making Pulao

  • 1 cup Ghee
  • 1 Onion medium, sliced
  • 1 tbsp Ginger-garlic paste
  • 1 Tomato large, chopped
  • 150 gram Yogurt
  • 1 Cardamom
  • 3 piece Cinnamon
  • 8 Cloves
  • 10 Black Pepper
  • 2 Star anise medium
  • 4-5 Chilies chopped
  • ½ tsp Red Chili Powder
  • 2 Bayleaf
  • 1 tbsp White Cumin Powder
  • 1 tbsp Salt

Instructions

  • Wash and soak the rice for one hour.
  • Take a pressure cooker and add water, meat and all the ingredients of the stock and then cover the cooker for pressure for 20 to 22 minutes.
  • Meanwhile the meat is cooking then take a skillet. Add a cup of ghee. Add sliced onion. When golden brown then add ginger-garlic paste. When brown then add a little water to prevent onion from burning. Add salt and spices in it. Then add tomato in it. Stir continuously during the process. Add yogurt and stir and then add chopped chilies.
  • After the time uncover the lid. Separate the meat and stock and strain the stock too.
  • Add cooked meat in the masalah. Add strained stock in the masalah. Add rice. When the stock will start drying then cover the lid for 10 minutes on low flame
  • Your tasty Beef Yakhni pulao is ready. Serve hot and Enjoy.

Notes

  • Try to use basmati rice in making this dish.
  • You can also use oil instead of ghee but I prefer ghee for more taste.
